The thermostat sets the temperature the engine is designed to run at, and colder is not better. A modern engine is calibrated for a specific operating temperature; fitting a cooler thermostat can put it into a permanent warm-up fuel map, hurting economy and leaving condensation in the oil. Fit the rating the manufacturer specifies unless a tune says otherwise.

If an engine runs hot, the thermostat is the least costly thing to check but rarely the only thing wrong. A collapsed lower hose, a tired water pump impeller, a blocked core or a failed fan clutch all present the same way. Replace the housing gasket whenever the thermostat comes out — it is a common leak point once disturbed.
